FRIENDSHIP KITCHEN - THE ALLIE NO. 11

ALLIE HUANG

She can be found teaching farmers how to nurture their plants to bring out rich, natural flavours. She can be found explaining theories and the methods of food processing. She just can’t stop talking about food!

A professional chef specializing in French cuisine, Allie Huang’s love of food has brought her to expand to new horizons within the culinary arts, including food science, creating her own brand, “Food in Formosa”, and collaborating to open a small coffee shop!

In Tainan, Taiwan, there is an alley barely wide enough for two people. Here, hidden away from the bustling city streets is the warm and cozy cafe, “Alley No. 11”. You are not greeted by flashy decor or attractive menus, instead, you’ll feel a unique soul-soothing and laid-back atmosphere typical of Taiwan. Admire the art pieces, CD albums, and postcards on the wall, and you’ll see how Allie has poured her heart into her work. Through her cuisine, she transforms the bond between natural ingredients and the environment, while combining local culture, produce, and farming. You can almost hear the hard work put into each dish, and the love and care of local farmers. Allie believes that if we focus on quality over quantity – creating fresh, local, and high-quality cuisine – food can change the world. This summer, Allie is bringing her story and her food to Canada, where you’ll see firsthand how much Taiwanese chefs and farmers cherish the environment, cultures, peoples, and land.
